“Take What You Need” Mini Chocolate Trifle Garden Cakes

These little chocolate trifle garden cakes are such a fun dessert for a gathering because they’re easy to make but feel really special. Each jar is layered with chocolate cake and chocolate mascarpone whipped cream, then topped with crushed chocolate cookies to look like garden soil, fresh mint, and a handwritten affirmation. I call them my “take what you need” mini chocolate trifle garden cakes because everyone gets to choose the message they need most. And because party prep is already enough work, I use a boxed chocolate cake mix to keep these extra easy.

Ingredients

For the Trifles

  • 1 box chocolate cake mix, plus ingredients called for on the package

  • 1 batch Chocolate Mascarpone Whipped Cream

  • 2 mini baggies Simple Mills Sweet Mmm’s, crushed, for the “dirt”

  • Fresh mint, for decorating

  • 10 wooden craft sticks

  • Food-safe marker, for writing affirmations

Chocolate Mascarpone Whipped Cream

  • 2½ cups cold heavy whipping cream

  • 8 ounces mascarpone, cold

  • ⅔ cup powdered sugar

  • ⅓ cup unsweetened cocoa powder

  • 2 teaspoons vanilla extract

  • ¼ teaspoon kosher salt

Instructions

Bake the cake. Prepare and bake the chocolate cake according to the package directions. Let it cool completely, then break or cut the cake into small pieces.

Make the chocolate mascarpone whipped cream. Add the cold mascarpone to the bowl of a stand mixer and beat briefly until smooth. Add the heavy whipping cream, powdered sugar, cocoa powder, vanilla, and salt. Whip on medium-high until fluffy and medium-stiff peaks form.

Make the affirmation markers. Use a food-safe marker to write a different little affirmation on each wooden craft stick, like “I am loved,” “I am doing great,” “I am growing,” or “I am worthy.”

Assemble the trifles. Layer pieces of chocolate cake and chocolate mascarpone whipped cream in 10 small jars, repeating the layers until each jar is nearly full.

Make the little gardens. Sprinkle crushed Simple Mills Sweet Mmm’s over the top to create the chocolate “dirt.” Add a small sprig of fresh mint and tuck one affirmation stick into each jar.

Serve. Arrange the mini trifles together and let everyone take what they need.

Shortcut

I used Simple Mills Sweet Mmm’s for the chocolate dirt, but crushed Oreos work great too. And definitely don’t feel like you need to make a chocolate cake from scratch here. a boxed cake mix makes these so much easier for party prep.

  6. Serve Arrange all of the mini chocolate trifle garden cakes together and let everyone take what they need.

Shortcut

I use a boxed chocolate cake mix for these because it makes party prep so much easier. There is already plenty going on when you are hosting, and this is one of those desserts that still feels really special without making everything from scratch.

Chocolate Dirt

I used Simple Mills Sweet Mmm’s for the chocolate dirt, but crushed Oreos work great too. You just want enough crushed chocolate cookies to completely cover the tops so they look like little garden beds.
