Eli’s Turkey, Brie & Apple Sandwiches

He LOVES a good sandwich and me…well I love a good soup and salad. We are really the perfect pair haha! We just hosted our Fall Harvest Farmer’s Market at home and of course Eli was on sandwich duty!
Last year for our Fall Cafe at home Eli made these Turkey, Brie & Apple Sandwiches. They turned out SOOOO good!! So of course, this year I needed we bring them back. I never ended up sharing last years recipe so I am excited to share these for the first time this year!
Eli’s Turkey, Brie & Apple Sandwiches
Makes: 10 sandwiches
Prep Time: 20 minutes
Total Time: 20 minutes
These turkey, Brie, and apple sandwiches are one of those easy combinations that just work for Fall. Thinly sliced turkey, creamy Brie, crisp Honeycrisp apples, and peppery arugula get layered onto ciabatta with a sweet and tangy honey Dijon spread.
Ingredients
10 small ciabatta rolls
1½ to 2 pounds thinly sliced deli turkey
12 ounces Brie, thinly sliced
2 Honeycrisp apples, very thinly sliced
2 to 3 cups baby arugula
½ cup mayonnaise
¼ cup Dijon mustard
1 tablespoon honey
Freshly ground black pepper
Instructions
Make the honey Dijon. In a small bowl, stir together the mayonnaise, Dijon mustard, and honey until smooth.
Prepare the rolls. Slice the ciabatta rolls in half and spread the honey Dijon generously over both cut sides.
Assemble the sandwiches. Layer each roll with turkey, Brie, very thinly sliced Honeycrisp apple, and a small handful of baby arugula.
Finish and serve. Add a little freshly ground black pepper and close the sandwiches. For my party, I served these as is without crisping the bread or putting them in the oven. If you have a little extra time, you can warm the sandwiches in the oven for a few minutes before adding the arugula. The bread will get lightly crisp and the Brie will become nice and melty. Serve whole or cut in half.

For a Party
I served these without toasting them for my party, which makes them especially easy when you are making a bunch at once. Assemble, close, and serve.
Make Them Melty
If you have a little extra time, warm the sandwiches in the oven for a few minutes before adding the arugula. The ciabatta will get lightly crisp and the Brie will become soft and melty.
