This cozy peach cobbler features juicy caramelized peaches tucked beneath a soft brown butter cake topping. Browning the butter adds a rich, nutty flavor that makes every bite extra delicious.
Ingredients
Peach Filling
8 cups fresh peaches, peeled and sliced (about 8ā10 peaches)
½ cup granulated sugar
½ cup brown sugar
1 tbsp lemon juice
1 tsp vanilla extract
1 tsp ground cinnamon
¼ tsp ground nutmeg
Pinch of salt
2 tbsp cornstarch
3 tbsp unsalted butter

5 tbsp unsalted butter
1 cup all-purpose flour
½ cup granulated sugar
2 tsp baking powder
¼ tsp salt
1 cup buttermilk
1 tsp vanilla extract
Instructions
Preheat the oven to 350°F (175°C).
In a large skillet over medium heat, melt 3 tablespoons of butter. Add the peaches, granulated sugar, brown sugar, lemon juice, vanilla, cinnamon, nutmeg, and a pinch of salt. Cook for about 3 minutes, stirring occasionally, until the peaches begin to soften and the butter and sugars create a rich caramel sauce.
Stir in the cornstarch and cook for another minute, until the juices are glossy and lightly thickened. Remove from the heat.
In a small saucepan, melt the remaining 5 tablespoons of butter over medium heat. Continue cooking, stirring frequently, until the butter turns golden brown and smells nutty. Remove from the heat and let it cool for 2ā3 minutes.
In a large bowl, whisk together the flour, sugar, baking powder, and salt. Stir in the buttermilk, vanilla, and the browned butter until just combined.
Pour the peach filling into a lightly greased 9Ć13-inch baking dish, spreading it into an even layer.
Spoon the batter over the peaches and gently spread it into an even layer with a spatula, covering most of the fruit.
Bake for 45ā55 minutes, or until the topping is deeply golden brown and a toothpick inserted into the cake portion comes out clean.
Let the cobbler rest for 15ā20 minutes before serving so the filling can thicken slightly.
Tips
The peaches matter! If your peaches aren't super ripe and naturally sweet, don't reduce the sugar. Using the full ½ cup granulated sugar and ½ cup brown sugar helps bring out their flavor and creates a rich caramel sauce.
