How to make the perfect fall harvest charcuterie board

There’s something about a good charcuterie board that just brings people together. It’s the perfect appetizer: colorful, easy to share, and endlessly customizable depending on your mood or what’s in your fridge.

This board is one of my favorites because it’s simple but still feels special.

When I’m hosting during the holidays, I always start the evening with drinks and appetizers. There’s just something about having a board like this out when guests arrive. Everyone gathers around it, nibbling, chatting, and feeling at home before dinner even starts.

This charcuterie board has become one of my go-to holiday appetizers because it’s beautiful without being complicated. I love how you can mix and match whatever you have and still make something super tasty.

What You'll Need

Cheeses

Brie or Camembert: Soft, buttery, and mild. This is the kind of cheese that melts into a cracker like a dream. It's rich enough to feel indulgent but not overpowering, and it pairs beautifully with fruit or jam.

Aged White Cheddar: Sharp, crumbly, and just a little tangy. It adds structure to the board. That bold bite keeps you coming back for one more piece.

Manchego or Parmesan: Firm, nutty, and a little salty. It brings texture and contrast, acting as the grounding note in a board full of bright flavors.

Meats

Genoa Salami: Smooth, garlicky, and savory. When shaped into roses, it becomes the centerpiece. Rustic, elegant, and always beautiful.

Soppressata or Peppered Salami: A little spicier and more intense, making it the perfect balance to the creamier cheeses.

Fruits

Apples (red and green): Crisp, sweet, and tart. They cut through the richness of the cheeses and refresh your palate. Their color also adds natural beauty and brightness.

Fresh Figs: Sweet, floral, and delicate. They're the "wow" ingredient, the one that makes your board feel elevated and a little romantic.

Red or Black Grapes: Juicy, cooling, and naturally sweet. Leaving them on the vine creates a feeling of abundance and effortless beauty.

Crackers & Bread

Fig Crisps or Fruit and Nut Crackers: Crunchy with subtle sweetness. They add texture and pair perfectly with brie or jam.

Toasted Baguette Slices or Brioche Toasts: Buttery and golden, they create the perfect base for layering your favorite flavors.

Extras

Fig Jam or Honey: The sweet finishing touch that ties everything together. It complements sharp cheeses and enhances the savory richness of the meats.

Fresh Rosemary: Fragrant and earthy. It adds beautiful color and a fresh aroma that balances the richness of the board.

Edible Flowers (such as chamomile): Purely decorative, but they bring a soft, thoughtful touch that makes everything feel intentional.

How to Assemble

Start with your base.

Use a wooden board. It instantly makes everything feel cozy and rustic. Drape a linen cloth nearby to add warmth and texture.

Place your cheeses first.

Spread them out evenly so the board feels balanced in both color and shape. Brie wedges, cheddar cubes, and slices of manchego create beautiful contrast.

Add your meats.

Fold or roll the slices for height, or make salami roses using a wine glass. Simply overlap the slices around the rim, fold them inward, then flip the glass over onto your board to create a beautiful rosette.

Layer in the fruit.

Fan out the apple slices for color. Cluster grapes anywhere you need a little extra fullness, and tuck halved figs throughout the board to show off their gorgeous deep mauve centers.

Bring in the crunch.

Arrange crackers and toasted bread around the edges, stacking them slightly to create height and texture.

Add something sweet.

Place a small bowl of fig jam or honey on one side of the board with a little spoon for serving.

Finish with herbs and flowers.

Tuck sprigs of rosemary between the different sections and scatter a few tiny chamomile flowers throughout for a soft, natural finish.

Step back and adjust.

Fill any empty spaces with extra grapes or crackers. The board should feel full, abundant, and inviting, not perfectly arranged. The beauty is in its natural imperfection.

A Few Notes

The magic of a charcuterie board is that it's completely yours. Swap the figs for berries, replace the cheddar with gouda, or add nuts, olives, or dark chocolate. Every ingredient brings its own texture, color, and personality. Together, they create something that's beautiful, delicious, and uniquely your own.

Crunch and Extras

Instructions

  1. Start with your base Choose a wooden board or large platter. The warmth of wood adds a cozy, rustic touch. Layer a linen cloth underneath if you would like to soften the look.
  2. Place the cheeses first Spread the cheeses across the board for balance. Brie adds creaminess, cheddar brings sharpness, and manchego or Parmesan adds salt and structure.
  3. Add the meats Fold or roll the slices to create height and texture. To make salami roses, layer slices around the rim of a wine glass, fold them inward, and flip the glass onto the board.
  4. Layer in the fruit Fan apple slices near the cheeses, nestle halved figs between clusters, and drape grapes into open spaces. Let the colors and shapes feel natural rather than overly perfect.
  5. Add the crunch Arrange crackers, crisps, and toasted bread around the edges. Stack them slightly to create texture and make them easy to grab.
  6. Bring in sweetness Spoon fig jam or honey into a small bowl and place it slightly off center. This sweet element balances the salty meats and rich cheeses.
  7. Finish with herbs and flowers Tuck rosemary sprigs and small edible flowers between the clusters. Step back and fill any gaps with extra fruit or crackers until the board feels full and inviting.

Storage

Refrigerate leftover meats and cheeses separately in airtight containers. Store crackers and bread at room temperature so they stay crisp.

Make Ahead

Slice the cheeses, wash the fruit, and prepare the serving pieces a few hours ahead. Assemble the board shortly before serving for the freshest texture.

A Note from Madeline May

There is no wrong way to build this board. Every ingredient adds its own texture, color, and personality. Swap in berries, gouda, nuts, olives, or dark chocolate and make it feel like your own.
